In original state with original glassine wrapper over publisher's paper wrappers. Glassine with very minor edge chips. Front paper professionally reattached. With 12 plates and 85 figures in the text. Pages are bright and clean; substantially uncut along the upper and long edges - many pages never opened. Tissue papers attached and present with plates. No inscriptions, markings, or bookplates. Housed in a modern custom clamshell box with black leather exterior, gilded lettering on the spine, and archival cloth interior.


A follow-up work to Pasteur's, Études sur le Vin, where he develops a simplified heating process to eliminate bacteria in wine and beer, later adopted for milk and coined Pasteurization. This work significantly expands on the topic introduced in the author's work on wine and provides crucial descriptions and evidence for the Pasteurization process, which would only be applied to dairy products later.
